Christmas Bakes: Becs' Ginger Loaf
- 2 cups flour
- 1 cup brown sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp ground ginger
- ½ tsp mixed spice
- ½ tsp nutmeg
- 1 tsp cinnamon
- 1 + 1/3 cup golden syrup
- 225g butter (roughly diced)
- 2 eggs (lightly beaten)
- 250ml (1 cup) milk
- Nuts for topping (optional)
Preheat the oven to 150°C, and grease and line the base of an 11x30cm loaf tin
Sift dry ingredients together - flour, brown sugar, baking soda, baking powder, ginger, mixed spice, nutmeg and cinnamon.
Melt golden syrup with butter in a small saucepan. Add the golden syrup mixture to the dry ingredients, followed by eggs and milk. Combine well, using a whisk (note: this is a very wet mix).
Pour mix into the prepared tin (top with nuts if you like). Cook in loaf tin for 1 hour 10 minutes, or until a skewer comes out clean. When cooked, leave in the tin to cool for 30 minutes or more before turning out. Enjoy warm or cold.
